Sweet tea and fruit popsicle

After water tea is the most widely consumed beverage in the world. Try your next glass of tea as a sweet frozen dessert with this simple recipe.  Remember to use organic tea!

The Science

A recent study published in the journal Biological Agriculture and Horticulturecompared organic and conventional black tea from China and found that organic tea had higher antioxidant compounds suggesting “potentially greater health benefits, as these compounds are linked to disease mitigation and health promotion in human consumers”

The Recipe

 

Ingredients

  • 1 ½ cups of water
  • 4 organic black tea bags (caffeinated or caffeine-free)
  • ½ cup of fresh-squeezed organic lemon juice
  • ½ cup organic sugar (add ¾ cup if you prefer a sweeter popsicle)
  • Fresh fruit like chopped peaches

Directions

Bring the water to a boil.  Remove from heat and steep the teabags in the hot water for 2 minutes. Remove the teabags and stir in the sugar until it is dissolved.  Allow the sweet tea to cool to room temperature then stir in the lemon juice and chopped fruit. Pour the mixture into popsicle molds and place in the freezer for at least 4 hours. Serve on demand.
