Perspectives on the Demand for Organic Milk

Demand is growing for organic milk far faster than supply. Tensions persist in the organic dairy community over the access to pasture provision in the National Organic Program rule, and on policies governing the movement of replacement cattle into organic herds.
Some regional and national dairy processors are trying to meet growing consumer demand for higher quality milk by offering rBST-free milk. (rBST is a genetically engineered growth hormone that increases milk production). Recent articles covering the tensions in the dairy sector are raising a host of new issues and concerns -- some justified, others not.
